food for thought

I normally don’t cook. If I do it’s basic things and always the same things.  I bought a cookbook a couple of months ago at Barnes and Nobles and was going to try and use it once a week. Well it has not went to well. I did use it last week for thr first time, which I will talk about another time. This week I made Honey mustard pretzel-coated chicken fingers


  • 3 Tbsp honey mustard
  • 2 Tbps fat free liquid egg substitute
  • 5 ounces raw boneless skinless chicken breast, cut into 4 strips
  • 2 dashes of salt
  • 2 dashes of pepper
  • 1 ounce (about 10 twist) hard salted pretzels, finely crushed
  • 2 tsp granulated sugar


  • Preheat oven to 375 degrees
  • Mix honey and egg subsitute together in small bowl. Season chicken with salt and pepper, the submerge into mustard-egg mixture. Set aside to marinate at least 5 minutes
  • Mix crushed pretzels with sugar and spread on a plate.  Spray a baking sheet with nonstick spray
  • Thoroughly coat chicken strips with pretzel-sugar mixture, and then trasnfer to baking sheet. Mist tops of the strips with nonstick spray
  • Bake in oven for about 20 minutes, flipping chicken halfway through baking, until chicken is cook through

Makes 1 serving: 349 calories, 2.5g fat, 928mg sodium, 39g carbs, 1g fiber, 13.5g sugar, 37g protein.

Enjoy! I never order honey mustard but these things are yummy!  (yup that’s Mac and Cheese- blue box- in the backround)
